Happy National Roasted Marshmallow Day!

I think its fair to say that there is a day for EVERYTHING. Having only just celebrated National S'mores Day, we are now honoring National Roasted Marshmallow Day. (but why else would you roast a marshmallow if not for a s'more?) I know. I asked that myself.
 
But I am not one to miss a holiday so here we are! Handmade marshmallows are one of those things that can be enjoyed 'naked' or roasted, or baked, or fried (yes, I will be experimenting with deep-fried marshmallows and reporting back to you).
 
Any reason to celebrate the marshmallow. That corner-store confection turned food-trend is popping up in so many recipes, dessert tables, and food shops. So why not try one? If you have not tried a handmade marshmallow, you are surely missing out. Unlike the stay-puff distant cousin, these treats have a lightness with lots of flavor.
 
What flavors you ask? Well, with Fall coming and the fact that I could probably live in Fall 10 months of the year and that I LOVE it to bits, I am happy to say the new Fall menu is here. Many of your favorites are back, such as Rocky Road (which also has a day!), Pumpkin Spice (the first marshmallow I ever sold!), and so many new flavors that I have literally been working on for months.
 
How does Pumpkin Praline or Espresso Crunch sound to you? Made with all natural and mostly local flavors and ingredients (if I could grow my own sugar I would!). Organic raw pumpkin seeds are candied with organic maple syrup and top a pumpkin marshmallow. All inspired by my friend and fan, Sophie, who suggested a praline-type marshmallow.
 
Espresso Crunch is an update on my popular espresso marshmallow but now with crushed espresso beans. This was inspired by my coffee-loving cousin, Rennie, who wanted more "kick" in it! Done. All made with locally roasted, organic, Fair Trade coffee by Chicken Creek. (that's a mouthful!)
 
Other new flavors? Fruit & Nut, Triple Chocolate, Carrot Cake, and Apple Pie (that will blow your mind!) I am busy trying to capture some pictures but time when there is natural light is few and far between with my busy schedule. I promise to show you soon!
 
The Fall menu will be posted in the shop in the next few days and there is even more. Special seasonal s'mores and new candies. The Kitchen is busy and I am loving it.

3 Easy Gluten Free Summer Desserts

I love to entertain in the summer and I always include fun, fresh desserts to finish the meal. Hosting guests who eat gluten- free doesn't mean you have to sacrifice dessert. There are so many wonderful gluten-free options and gourmet marshmallows are naturally gluten-free.

1. Chocolate Pudding Marshmallow Parfaits~
Homemade chocolate pudding and vanilla bean gourmet marshmallows layered in jars makes a rich and decadent treat. Sprinkled with a touch of cocoa, these parfaits are easy (even the kids can help!) and will disappear quickly. I love to use recycled jam jars and eco-friendly "sporks" to make eating this easy while sitting on the deck.


2. Local fruit and Marshmallow Platter~
It may seem obvious, but when we have such amazing local fruit in the summer, I love to serve it just as-is. You really don't need to do much to these fresh peaches and blueberries to make them any better. Serve them alongside some tropical marshmallows like these Coconut and Pomegranate, and it makes for a great mix of flavors. You could even put a bowl of lightly sweetened whipped cream on the side.



3. Mini Lemon Meringue Marshmallows~
The very first time I sold my Lemon Meringue Marshmallows it was to a woman who was going to serve them for dessert. Ever since then I can't keep them in stock, and most customers love to serve them as dessert. This mini version (sans cookie if you know the original) fits nicely in these little cups and makes for a light bite at the end of the meal. Any flavor and small cup, baking cup, or small glass will do just fine in showing off the natural colors and flavors of gourmet marshmallows.

Serving guests who are gluten-free is easier than ever with the increasing variety of gluten-free products and recipes. And if you are thinking of gluten-free for yourself, don't forget that marshmallows are naturally gluten-free, making them a wonderful sweet treat any time.

Happy National S'mores Day!

Friday, August 10th is National S'mores Day! What better way to celebrate than to eat lots of fabulous handmade s'mores. I have been whipping up marshmallows and graham crackers getting ready for this, perhaps one of my favorite, holidays.
I love having the traditional graham cracker with chocolate and a plain-old marshmallow. But this year we are going gourmet with s'mores- all kinds of cookies, chocolate and of course, many many flavors of marshmallows. The combinations are endless.

Whether you are a chocolate fan or a fruity person, there is a s'more for you. I frequently receive requests for S'mores for Four kits with Lemon marshmallows so I added it to my menu this year.
Having all the best ingredients is the best place to start. But then there is technique. My husband makes the perfect embers in a fire for roasting marshmallows. But, I usually can't wait.
It doesn't take long for the marshmallow to be perfectly roasted. And my graham crackers that already have the chocolate on them, make it super easy to pull off the marshmallow and have a perfect s'more.
Sometimes I have more than one.
My daughters get in on the fun too.

The S'more, all grown up

The S'more has really grown up. I remember the days of jet puffed marshmallows and boxed graham crackers, chocolate bars and a campfire. But these days, gourmet marshmallows, gourmet cookies, and gourmet chocolate are taking the simple s'more to new heights. And so, what was once a camping snack has become a retro, sophisticated menu item for confectioneries and cafes.

Of course I love handmade gourmet marshmallows. And cookies. And good chocolate. So it just makes sense that I started making a whole kit for people to make their very own, grown up s'more. When I first started selling marshmallows, people would tell me that they made s'mores with them. With store bought cookies. While I didn't gasp in front of them, all I could think was "how could you put that beautiful marshmallow on a store-bought cookie?" So I quickly set out to make cookies that would match the quality and experience of my marshmallows.

Two years later and my S'mores for Four kits are still one of my biggest sellers. In summer AND winter! (who wouldn't love chocolate cookies with white chocolate and peppermint marshmallows roasted on the fire?) As you can see, the possibilities are endless and a s'more is now so much more than the sweet treat of days past. S'mores have inspired brownies, cupcakes, cake pops, and more so I am pretty sure our love affair with that perfect combination of gooey, chocolate and cookie will stick around for a while.

At least I hope so. Cause I just baked 500 graham crackers for s'mores kits.
